Frugal way to boil eggs

As I made boiled eggs the ‘alternative’ way for the umpteenth time this morning, I realised that if I never read/heard about it until more than ten years of cooking, it’s probably something to broadcast :) I discovered the technique from this post two years ago and have used it successfully every time since.

The secret is this: once the water starts boiling, you don’t need to maintain the fire underneath it. Just cover the pot with a tight-fitting lid and let the eggs sit (off the burner if it’s an electric stove) for the normal amount of time you would have boiled them for.

A tiny bit of power-saving, I realise. But just imagine what would happen if everyone in North America made boiled eggs that way :)

I never heard about it from you living in Florida :) Seriously, didn't read it or see it until two years ago with the post from 101 Cookbooks.
